Denny, I will try to find the web site that went into quite detailed analysis of this metallic taste problem that occurs in some beers. I too mash my caramels and yet have never had any metallic tastes. The web site in question has some very in-depth articles on brewing and so I took what they stated with a degree respect. However, that doesn't mean they are right, it just made a lot of sense. When I find it I will put it on the RCB newsgroup - probably not appropiate here. Steve W.
