What make a "Dry" Beer?

I am wondering what make a beer taste dry? I have been enjoying a few brews at the Flying Saucer, and notice that every once in a while I will drink a beer that seems to have a dryness after the swallow.. It seems to have a higher alcohol content but it doesn't seem to be that much.. I have noticed this between pilsners and porters more than an ale.

  1. The proportion of the brewing wort sugars which convert to alcohol is the dominant factor. Some beers have almost no residual sugar and taste dry, while some have quite a lot and taste sweet.
  2. The quantity and variety of hops used will adjust the level of bitterness, and a very bitter beer will taste dryer than a lightly hopped beer.
