Mike,

One way is to get a cheap appliance timer, and set the 3 on/off times for about every 3 or 4 hours. You have to play with the times to get it to work right, but it does work. Make sure you place a thermometer in a glass of water to get a correct reading of liquid not air.

cheers!

Back when I homebrewed I had an external thermostat that had a probe which went into the freezer. The plug from the freezer plugged into the thermostat which then turned the unit on and off. I think I bought it at grainger but it's been over ten years since I homebrewed. Or you could get a remote bulb unit that would do the same thing if you aren't afraid of wiring it yourself.

I've got one of these (external thermostats) set up on an old fridge that I use exclusively for my homebrew. Just as described, you just "set it and forget it" and it will maintain the desired temp +/- a degree or two. Works great for maintaining ideal fermenting temps. I've had mine for 3 or 4 years now, but if I recall, I paid somewhere around $50.00, new.
