Pinneapple? Anyone try it?

Looking for something tropical for my next batch. It will be my 4th. Have done the stuff that comes with the kit (so-so), then got better equiptment and supplies and had great luck doing a Pale Ale in Strawberry and Pale Ale in Rasberry. Was thinking of trying Pinnapple.

Am I crazy or could this work? My other thought was chocolate.

Opinions? I am thinking if I want regular beer I can buy it. Looking for something different.

Sounds disgusting to me :), but if you want to try it, add the pineapple to your seconbdary after the fermentation is pretty much complete. That way, the low pH of the pineapple won't affect the yeast.

I don't know about pineapple, But I have used unsweetened bakers chocolate powder in a stout that turned out pretty well.

Some yeasts can give it a fruity flavor I know. It's never overpowering, but good. I'd suggest a banana flavor over a pineapple. Whatever you do, might I suggest one thing, don't boil the fruit in the wort, keep it around

160 degrees F. That way you don't dissolve the tannins that can be found in the various parts and piths of the plant. I'd love to know your recipes for the Pale ales.

It works even better to add the fruit to secondary. You don't have to worry about the effects of heat, and the delicate aromatics don't get blown out by fermentation.
