Q: how much honey to use

I'm trying honey for kicks!

It's .032 lb gal and to be used in an IPA.

Try asking the rec.crafts.meadmaking group, they know quite a lot when it comes to honey.

I had ummed and arred about this very question for a while myself. After a lot of digging I settled on the following quantities etc.

I used about 1kg honey in a 23 litre batch. What I was after was a honey-wheat beer. Best to use clover honey as well by the way. The honey outcome was there but subtle.

You also need to be carefull as honey may contain enzymes and other "things" to throw off your beer. I pastureurised mine by bringing a few litres of water (suppose you could use your wort) to just short of a boil , then adding the honey to it and removing the heat. Stiiring for a few minutes then adding to the fermenter. I have also found out that there is a tradeoff of sorts as heating the honey for too long will destroy some of it's characteristics that are desirable.
