Re Coopers homebrew

I worked for a coopers distributor when I lived in Australia and coopers home brew is made pretty much the same way as their commercial beer at the wort stage then it is put into a low temp vacuum evaporator (a very expensive one ) and then turned into home brew the yeast they use is a very heat tolerant yeast for the Australian conditions and to be fool proof for most Australian homebrewers that think 30 deg c is the correct brewing temperature .White labs where producing an Australian Ale yeast im not sure if they still do . You can always culture the yeast from the bottle which is pitched fresh into the filtered beer at packaging time for bottle fermentation but for purists this yeast is not the yeast used in the primary fermentation it is actually Worthington White Shield ,but it does produce a beer close to coopers. If you brew 2 cans of Coopers Real Ale and couture the yeast from the coopers bottle you will get a pretty close copy of Coppers Ale (the red one) .So the main Idea is if you are trying to copy Coopers you throw the dry yeast packets and use a liquid ale yeast have fun .
