I have used honey for priming for years.  I boil 2/3 cup honey in 1
pint of water for 5-7 minutes.  I have found that is provides a much
more consistent carbonation than corn sugar and does not take any
longer to carbonate.  It does add a little residual sweetness, but not
enough to be noticed.

Just curious...have you ever done a blind tasting to be sure you aren't
unduly influenced by your preconceived perceptions?  I tried one a few
years ago...no one could distinguish between beers primed with honey,
corn sugar, table sugar, gyle or force carbed from a keg any more often
than chance would dictate.  If you've never done that, I highly
recommend it!
