Just curious...have you ever done a blind tasting to be sure you aren't unduly influenced by your preconceived perceptions? I tried one a few years ago...no one could distinguish between beers primed with honey, corn sugar, table sugar, gyle or force carbed from a keg any more often than chance would dictate. If you've never done that, I highly recommend it!
