Reading in this newgroup and in various literature encourage me to start brewing. I would like to make an 6 gal. all-grain koelsch type beer and ordered the needed stuff. I will use Wyeast Koelsch # 2565. I also ordered DME for starter. Now my question:
Make the starter at least a few days before brewing. If it finishes before you're ready to brew, you can store it in the frodge until you're ready to use it. Use 1 oz. (weight) of DME per cup water to get a gravity of about 1.040-1.045. How big a starter to make depends on how much yeast you're starting with. If it's a regukar 50 ml Wyeast smackpack, start with a pint. When that's fermented out after a few days, carefully decant the spent wort from it. Be sure not to pour out that tan stuff on the bottom...that's your yeast! Then add a 1/2 gal. of fresh wort to your starter and let it ferment out a fewe more days. When you're ready to use it, pour off most of the spent wort (assuming it's done fermenting...if not, use the whole thing) and pour that tan stuff into your fermenter. If you're using a Wyeast XL pack or tube, just go right to the 1/2 gal. stage.
