Does it make a difference what sort of container you use to age your wine?

Very much so. Plastics of all sorts are gas-permeable, and hence unsuitable for long-term storage of wine, as oxygen can dissolve through the walls of the vessel. Best for most home winemakers is a glass carboy fitted with an airlock filled with potassium metabisulfite.

Next best container for aging is a tightly corked wine bottle.

I seem to get the best results from about a year bulk-aging in carboys, followed by 2+ years in bottles.
