Brew King kits and other musings...

I'm a newbie. I have been reading this NG for months and have learned more about winemaking from current (and archival) posters than I ever thought possible. I truly appreciate the sharing of successes and mistakes by so many people. I purchased my first decent wine kit in Sept last year, a BK Selection Stags Leap Merlot. I followed the directions closely and it has been bulk aging for over 3 months now. I like wine...a lot...so I started a BK Selection Australian Cab/Shiraz and it has been aging now for a couple months. Then I started a few country wines, and then some Welch's wines, and suddenly I have 14 batches in various levels of production in my basement. My point is, I can't take it anymore...the anticipation is killing me! I've thiefed a dozen samples of the Stags Leap for various friends and have received nothing but glowing reviews and requests for a bottle. So...I'm not waiting any longer. I'm too weak! I'm bottling it tonight and then I'm going to pour myself a glass. I might even light up a cigar. Then I'm going to sit amongst my carboys and tell them stories about when they were young. Does it get any better?

Ha. My wife thought I was bad with 6 batches on the go--Argentinian Malbec, Barolo, Port, Blackberry Merlot, Chardonnay and Welch's (well, actually President's Choice-they don't sell the pure Welch;s in Canada).

You clearly have me beat. Obviously, time to ramp up. Hardly a weekend goes by where I don't start thinking about starting another up.

What kind of Presidents Choice juice are you using? I just found out that they dont supply Welches 100% juice Concentrate here in Canada. I am very interested in starting some.

I just bottled a Tropical fruit Riesling (Niagra mist with added sugar for about 11% abv) and a Chablaise Blush slightly sweetened. Currently I have an apple wine from 100% store bought apple juice. It is fermenting well for a few days now.

We age so that wine will taste good. If it tastes good now, no need to age longer. Go for it.

So many recipes -- So few carboys!

It was just regular Pres Choice Grape juice in a bottle. They had Welch's in the bottle, but not the frozen, and both claimed to be pure Grape Juice so being a cheapskate I went with Pres choice to save a couple of bucks.

Just started in a month ago. When finished will post the results, but that won;t be for 3 months or so.
