forgot to put water/sulfite solution in airlock for 1 day

I am making a Vinters Reserve Pinot Grigio. I am in "Secondary Fermentation" - about 14 days into the process awaiting my wine to dry so I can go ahead and mix in the sorbate, metabisulfite and clarifier. I checked my hydrometer reading yesterday and when replacing the bung and airlock I forgot to add water/sulfite - airlock and bung were on tight but with no water and solution. It was like that for about 24 hours until I realized my mistake.

My question... will my wine oxidize because of this? Should I plan on having a batch of "vinegar"? THANK YOU VERY MUCH IN ADVANCE FOR YOUR RESPONSE!

No. It will be ok. It's protected by the sulphite in the origional mix and still should have a bit of CO2 in there. Wine kits are a bit on the forgiving side in this respect.

I make vinegar too and it takes weeks to form; that said, dont do it again... :)

Seriously, the exposure to air would have been minimal from what you describe, I can't see it being an issue either.
