Maple syrup wine would be classed as mead. I recommend you go to

Because maple syrup wine has all the same foibles and uses the same methods as making mead. Much as making fermenting apples does not make true wine (from the vine) but is classified as such as it has the same problems, even though the methodology is quite different.

As you study wine making and mead making you will see the difference and I think you will see why I suggested you visit the mead site. But then you do not have to if you do not want to.

HEHE I live on the mead sites... I was researching here because I'm getting my first Gallon of Grade B Vermont Maple syrup sent to me, Should be in production next week.

Still trying to make a final decision on the recipe.

Try this:

Dilute syrup with water to appropriate SG, say 1.080 or so... Add in acid blend, yeast nutrient required for your batch size. Ferment with EC 1118 until dry. Cold shock and sterile filter if you want to sweeten. Sorbate is also an alternative. Let age for a while, like mead this stuff is apparently harsh at first.

Age it. Some oak might add a nice dimension, but don't over do it! I've thought about making some maple wine (I make my own syrup) but I much prefer the stuff on my pancakes. Anyway, HTH.
