Shelf life?

What is the shelf life on a non preserved, non pastureized beer? Actually my question is does beer become unsafe to drink if it is 2 to 3 years old? Not so much the taste, but does it go bad like expired milk? David

Unsafe...naw. But it might be as pleasant to drink as expired soured milk.

I've been buying singles of micro brews and happened to get a bottle that was brewed in 2003. I just didn't want to drink a bottle of "poison" beer. I am changing from the mass produced beer drinker into a beer snob. Thanks, David

As long as the cap/cork of your bottle isn't pierced, and open to the environment, there is NO known pathogen that can survive in beer. The bacteria and wild yeasts that can, can give you in the worst of cases a good bout of diarrhea.

If it's a stronger bottle-conditioned beer it may well improve over time. If it's an IPA or something it may be oxidized and taste a bit cardboardy, but it's not going to be dangerous to your health in any way.

Then you're missing out. Some beer are made to be cellared.

I have some several years old, it's been cellared at about 55F and is still drinkable if not outstanding. If it was outstanding it wouldn't still be there. ;-)

I just bought a bottle of "05-05-05" ale, which the brewer suggests should be cellared until 12-12-12. If I can find another I'll keep it until 1-1-06 and test drive it. Sorry, don't remember the brewer.

yeah but how many are meant to be sitting on a shelf at room temperature in a room with flourescent lights on at least 18 hours a day
