Too fast?

G'day. I'm brewing beer in 2 20 litre fermenters at the moment, as I usually do........ What's different from every other time is the rate that the beer seems to be fermenting. I'm in Townsville and the weather is stinking hot and humid right now, 25C overnight to 34C during the day. Do I need to slow the fermentation down a bit? At this rate, it will probably stop bubbling in 2-3 days. (Usually it takes 6-7 days) Can beer ferment too fast? Keeping my beer cool might be a problem though, I'm flat out keeping MYSELF cool.

mmm, interesting. i got my bottle capper of my uncle who lives in townsville. ain't that quaint. and i live in melbourne.

Spooky! I got my bottle capper from my(late) dad who lived in Melbourne.

Brewing is dead easy in the tropics due to our constant temperatures here. My dad in Melbourne used to brew Coopers and bottle it up. I prefer the keg system and just follow the instructions from the local home brew shop. My dad had to dick about with hydrometers, electric blankets and all sorts of shit, because Melbourne is so variable in it's weather. Then again, he used to have the time to "talk" to his beer and was a keen experimental brewer. Myself, I haven't got the time or the inclination. I brew a nice beer for buggar all cost and effort. I've struck the winning formulary and I'm not wiling to mess with it.

I'll be in Melbourne next year for a few weeks. If you live anywhere near Camberwell, maybe we could compare beers?

yeah, i live just over the river in ivanhoe.

my uncle had to stop brewing because he got some infection in the vessels and it wouldn't work any more. i have had no trouble with variable temps etc. we just brew it for about 10 days or until the fermenter lock stops bubbling. then it's right. haven't really gone wrong yet. we do most of ours in 1.25 litre plastic bottle which drops the bottling time down significantly. it used to take over an hour for 2 people to clean all the stubbies then pour the beer into each, now it takes about half that time with no drop in quality.
