lids&greens-

Oct 04, 2004 2 Replies

Having done some re- search on the matter, I have not been able to de- termine correct proto-call re- garding whether or not one sh- ould replace the pot lid when st- eeping greens. I normally leave the lid off, but recall reading some time ago that this is not necessarily the proper way to proceed. Is there a protocall regarding this?

Leave the lid on - it maintains the correct brewing temperature. Brewing with the lid off lets the tea cool too much before it's finished brewing. That goes for all tea, not just green.

i always leave the lid one.

however, 2 years ago when we visited a plantation in China which produced dragon well. our "Dr. Tea" told us not to cover the lid cause it would be too hot for their tea. (btw, the tea was very good) maybe leave the lid on applies to some really delicate green tea.
