Acid test?????

From the standpoint of taste is it possible to acid and or Ph test your wine after the fermentation has taken place instead of testing the must prior to fermentation? Thanks,

Yes, but it's kind of too late at that point. You are better off adjusting acid pre-ferment. Joe

It may be better to do it at the start but better late than never. Also, it is a good idea to do it at the end anyway. You may find that your values have changed. It is important to have your pH right at the end so you get the correct sulfite when you bottle.

Before ferment, while sugar is high and thus masking acidity, you can only adjust acid based on numbers (analysis of pH and TA). Afterwards, you only adjust based on taste. It is best to do major adjustments prior to ferment, adding to just below your normal target level (though a bit of tartrate will drop out during ferment due to the alcohol changing bitartrate solubility). Then, after ferment, you tweak it based on taste (ultimately the only true way to tell).

Don't mean to put words in James mouth but I don't think that is exactly what he meant. The original must, whether you have or have not added extra sugar will be sweeter than the wine. The sweetness will mask the acidity so taste is not reliable. The testes are the only way to go. At the end, when the wine is dry or stabilized and sweetened to the desired level, taste can be very accurate as far as setting the acidity. There is an exception to this however. If you are adding sulfite to protect the wine, you need to know the actual pH. So even at the end, it is a good idea to "measure".
