Orange wine and sugar

I have made orange wine for many year trying to get the sweetest fruit possible. The highest SG usually have been @1036, the result have always been a great wine to, ... cook with. This year I came across an orange tree that have been hit by lighting, now the fruit look just great but taste more like a lemon, but here is the strange part the sugar is 1042! Yes I tried several different fruit and it seems to be from 1038-42, most are over 1040.

How is this possible since the fruit taste so sour?

Acid makes things taste sour, if there is enough acid in something then it will counteract the sugar. Test the PH of these oranges. Post the results. Ken
