Anyone have any tricks for settling New York State Diamond? I currently have it at about 40 F and it has settled less than 1/4 in a day and a half. I dont have access to a DE filter or the like. I didn't have much choice but to take it unsettled due to the distance, and the fact I wasn't getting back there any time soon. They indicated that it was a bear to cold settle and recommended I ferment it as is, but it had too many solids for my liking. Thanks, John Dixon

Did you fine the juice. A little gelatin (even as low as 0.1 grams per gallon) and kies will help to compact those lees. Also pectic enzyme will help break things down, but I'm assuming you're already using that.
