tannic acid in white wine

Dec 01, 2003 1 Replies

I've never added tannic acid when making white wine. Has this been a mistake? Is it too late to add now in Dec.? (My whites are vidal, chardonel, and cayuga.) Jim Brown

Typically, white wines do not have a lot of tannin (BTW, it's not an acid). I wouldn't add any.
