Yeast Storage Question

The other half came across a couple of packages of yeast (Lalvin D-47 - dry yeast) that were purchased a few weeks ago and hadn't made it into the refrigerator, so they've spent about 3 weeks at room temperature. The package says nothing about keeping it refrigerated, but that's how we buy it and store it. Should we just toss this or is it likely still okay? (Expiration date is jan 2004).

Mostly just curious because I actually read the package and it doesn't say a thing about keeping it refrigerated. All this time I thought it was essential! :-)

The wild yeasts in the vineyards do not require refrigeration, so why should that?

I don't put the yeast in the fridge either, unless I open it up to use only part of it. Then, I put it in the fridge and make sure I use it within a month. Never had problems doing it this way. Darlene

I'd use them, but maybe have some other sachets as backup. You should be rehydrating anyway, so if you don't see a little foam on the surface of the liquid when rehydrating, try another sachet.

I've bought sachets of Lalvin yeasts from my nice, warm LHBS before, including some pretty knocked-about ones, and they have all worked out fine.

Not essential, but recommended. It's all about maximum viable yeast cell count - the more you preserve, the faster your must will take off when pitching.

I have never refrigerated any of my yeast. Even those which I used to buy in "bulk" containers ( 60 gm!!!!!!!! ). I have just used some yeast which was in this sort of tub which is over 3 years old and part used ( I found it at the back of the shelf ) . It has rehydrated and is fermenting vigorously in my strawberry wine. However I normally use single dose packeted yeast these days because of the range of yeasts available. Never had a failure to kickstart! Point in case is that not one of the 3 local HB Suppliers hereabouts refrigerate anyway so why should I. I also don't store it in my car!
