making mead

planning on making some mead in the near future. it calls for 2.5 gallons water and 8 lbs honey,and citric acid. what I need to know is how much citric acid to put into balance the sweetness. also do I need to add more water to this to make five gallons.or does it just make 2.5 gallons. does any one have a recipe for making mead.

Gee, I wonder where you got the recipe... ;)

The above recipe is for a 3 gallon batch. For 3 gallons, use 8 lb honey and

2 teaspoons acid. For 5 gallons, use about 13 lb honey and 1 tablespoon acid. Good luck, hope you enjoy it!!
