If you want an extra shot of espresso, wait until it's dead before you order, and order an odd number of shots (usually 1 or 3). Since they have to make up an even number, leaving them with an extra shot they'd otherwise have to throw away (again, assuming it's dead in there), they'll almost always offer it to you for free.

I know, that's cheap, but I learned that trick inadvertantly.
