Very long brewing times

Mar 05, 2005 0 Replies

I have been experimenting with brewing green tea and even some blacks at much lower temperatures and for longer times.

I have read here about sun brewing and even refrigerator brewing.

Is there a table anywhere that shows optimum (or maximum) brewing time as a function of temperature? I realize everything is subjective, but recommendations are already given for the recommended temperature. I am wondering if there some general way to convert the brew time when using cooler water.

For example, is there a table like this or could one be constructed?

Temp Time

190F 3-4 min
180F 3-5 min
170F 4-8 min
160F 5-10 min
150F 6-15 min
140F 10-30 min
130F 15-60 min
120F 1-5 hours
110F 2-8 hours
100F 5-15 hours ...

Thanks
