We grilled some Berkshire pork chops from Allen Bros. last night with a lig ht spice rub and a bit of cherry wood smoke so I opened up a bottle of the
2007 Frederic Esmonin Mazis Chambertin. The wine was bright red in the gla ss with aromas of black cherries and cola with a bit of red dirt minerality . Quite tight on the palate it eventually opened up after 3 hours to show some exotic spice, cherry and red berry flavors. This wine has a firm acid ity and a significant tannic aspect to it that at times seems to overwhelm the fruit but it shows better with food. I probably won't open another bot tle for a few years and I'm hoping that time will bring it together. "B-"- posted
