Taittinger, Usseglio, Ponsot, etc

We met at a freinds home for dinner last night and opened a few nice wines.

With passed hors of salmon mousse wrapped with white anchovy, pheasant liver pate and a truffled mushroom bruschetta.

1995 Taittinger Comtes de Champagne-lively and fresh. Plenty of apple and pear notes with a bit of brioche on the finish. Very refreshing and clean with a nice mousse and a well balanced if not slightly short finish. "B+"

With a terrine of Pheasant and Duck:

1993 Domaine Ponsot Latricieres Chambertain-The wine was ready to drink and was probably at the top of it's aging curve. Medium garnet with a slight hint of brick. Powerful pinot nose of apple pie spice, sweet red cherries and vanilla. Silky and smooth on the palate with ripe cherry, cola and exotic spice notes and a fair amount of minerality. "A-"

2004 Perrot-Minot Chambertain Clos de Beze-Dark reddish purple. Very ripe nose of blueberries and anise. Rich and supple on the palate showing fairly heavy ripe black fruits, currants, cassis, blackberry and black cherry with a touch of black coffee. "A-"

With seared jumbo Gulf Pink Shrimp in a Brandied cream sauce:

2002 Olivier Leflaive Batard Montrachet-This wineis always one of my favorites. Big and bold aromas of Meyer lemon, apples and white peaches. Very rich in the mouth with lemon curd, peach and pear. A touch of spice and stones on the finish. "A"

With Onglet of Beef brasied in red wine and beef blood:

2001 Ussiglio Deux Freres CdP-Deep garnet in the glass. Sweet red fruits come pouring out of the decanter as we were serving. Red currants, red raspberry and a bit of ripe banana. Quite plush and almost thick on the palate. Plenty of blackcherry, cocoa, raspberry and leather. "A"

With Pears poached in Sauternes:

2001 Chateau D'Yquem-Still a baby. Bright yellow gold in the glass. Deliciously full of pineapple, honey, pears, exotic fruits and spices. Great balance of sweetness and acidity. "A+"
