[TN] '02 Dauvissat Chablis - PremOx warning

Tonight, with an impromptu dinner of tortellini with lobster in a white wine-saffron-butter sauce, we opened:

2002 V. Dauvissat Chablis 1er "Vaillons" color: dark yellow nose: initially, oxidation/iodine, later taking on citrus and mineral notes palate: crisp acidity, flinty, lemons and a background of brown apple oxidation

We opened this bottle thinking that it might be too young still, but were shocked at the level of oxidation present in this wine. Still attractive, but worrisome in its oxidation, it should be drunk soon if you have any.

My guess from my very limited experience with Dauvissat's Vaillons is that it probably may have been too young had it been pristine. I had the 2000 Dauvissat Vaillons about a year ago, and found it still very youthful... I recollect that the wine only started to really open out and develop after a fair bit of air (and sadly towards the end of the bottle) - so quite worrying that the 02 is already showing PremOx signs.

Could this be one reason that Verget, for one, has gone Stelvin? We will see if it is of any effect though it will take time. Luckily my tastes run to the Macon Village, St. Veran and other less pricey offerings. I am looking for the 09s now (seg) DY after all!

thanks. Funnily, the white Burgs I worry least about are the oldest ('93s). I no longer own any '96s. Always shocked at high prices they fetch, since it's the vintage where problems are most discussed. Worry a lot about my couple remaining '98s and '99s (Ramonet, B. d. Martray) I have a couple of Dauvissat '02s, will get to soon. My new strategy for white Burgs is to buy good Bourgognes (Matrot, Pernot, etc), village Chablis and a few less expensive 1ers, and maybe things like Clair St Aubin 1er. Not go over $30, drink em young.

I have a few '96's left but I have a fair amount of 2000 through

2004's. I haven't found problems with too many of them but recently I've had a problem with a few '99's from Olivier Leflaive.
