4 batch lager fermentation

Jul 12, 2003 1 Replies

I brewed a 4 batch of lagers 2 weeks ago. 5 gallons each

2 oktoberfest and 2 budvar's

I aerated like I normally do, had 2 large starters made for each style.

I had the wort in corny kegs, in my fridge. Set at 65 for one day. I saw the signs of fermentation, so I then lowered it down to 55

5 days later down to 50 (I think this was my mistake)

Earlier this week I pulled the kegs. (8days of primary fermentation) I took a gravity reading, then racked into a clean corny keg.

The 2 front kegs looked good. 1 oktoberfest and 1 budvar The 2 back kegs still had high gravity and the budvar was VERY high.

1.045 OG and I measured it at 1.030.

I figured the ones in the back were colder, so the fermentation stuck.

Here is what I did. Racked the 2 good ones, and put them in the rear of the fridge. Didn't rack the oktoberfest 1.56 OG 1.020 I measured, I will give this another week I racked the stuck budvar on to the yeast cake of the "good" budvar.

I set fridge at 55°

Now 4 days later, the budvar is now active, and some activity from the other oktoberfest. There isn't much at all from the 2 rear beers, they must be complete.

Am I hurting the 2 rear beers, they should be lagering now, but the fridge is probably 55-52 in the back

Did I ruin the budvar by racking onto the yeast cake?

any other sugestions?
