Canned Cherry Wine

OK, I've just finished my second batch of Tinned/Canned cherry wine, using Jack Keller's recipe. Of course, the day after I put the second batch into secondary, I found canned cherries on clearance at local grocery store. For other two batches, paid $5/can for first one(Oregon Brand cherries), and

1.88/can for second batch(Best Choice store brand cherries). now I find Sysco brand cherries for .50/can, and not sure I can pass that up. Anyone happen to try the Sysco(generally a brand you only see used in bulk can quantities for cafeterias, etc) brand cherries to make wine, and have any feedback? Or anyone have any suggestion on other variations to try. I have no problem having 4-5 gallons of cherry wine here, means I can really let some of it age, but also always happy to get more variety in my future wine cellar, so any variations/suggestions would be appreciated.

The first batch I made with Oregon cherries is only a month or two old, so have had no opportunity to see if I really like it(as of course way it tastes now is not any fair indication as to how it will end up).

I'm guessing I'm going to be making a lot of cherry wine over next few months(going by store later today to buy all the rest of the cans they have, probably 10-15, bought two yesterday), so any input would be appreciated.

Joel
