It depends on the press type and grape or must; bladder presses are usually operated from 0.2 bar to 2.bar (3 -30 PSIG). 70 to 80% of red must is free run as a guesstimate. As a general rule the lighter the pressing the more delicate the output.
I'm sure you can get to over 50 PSIG for hard pressing but you are better off going slower than faster.

Do you think 25PSIG max would be sufficient for most wines? I'm working on a custom wine press and may be limited to 25PSIG.
