My local (40 miles away) homebrew shop is taking orders for 6 gallon pails of juice. (They drive out, pick up the pre-ordered juice at the crushing site, and then drive it back - no sitting around for days in a tanker somewhere). I'd like to order two batches, one for making a 6 gallon batch of wine, another to make a pyment and a smaller batch of wine. I'm looking for information/recommendation on these types, as I'm not entirely familiar with the grapes and their resulting wines (and I've never made a pyment before).
Fruity wines are fine, but not too sweet.
