Does anyone know if the pH of a wine changes after bottling. I know there are changes in the chemistry of the wine after bottling such as reduced amount of SO2 and changes in the structure of tannins and other organic compounds but are there changes in the pH? The purpose of this question is to determine the shelf life of wines and how to enhance it.
