I am truly surprised with my watermelon wine. This is my second attempt. My first try didn't work out that well - the wine wouldn't clear, then we had a warm spell, and then the wine started to ferment again in the bottles. Anyway, this time around I squished the watermelon juice out of the watermelon so that I ended up with pure watermelon juice (no pulp). The fermentation went very well, but what has surprised me the most, is that after racking 2 times, the wine is already crystal clear. I used the same recipe, but instead of fermenting on the watermelon pulp, I used the juice only. Interesting, huh...? Happy Fermenting, Darlene

Pretty raw yet. It has quite a kick to it - about 15% Alcohol. I wasn't shooting for that high an alcohol content, but the must just fermented to zero so quick it surprised me. Usually, when I use that amount of sugar, the yeast dies and I get a sweeter wine. I think it will mellow, like my pumpkin wine seems to be doing. I tried my pumpkin and it was so raw when it was young, but very smooth when I bottled it. It will be interesting to see what it tastes like if I can wait till it is 2 years old like the recipe says. Darlene, good luck with it. I can describe what mine smelled like before it cascaded gently down into the household plumbing: Urine. With a touch of yeast overtones. It was dreadful even after a year in the bottle. Hope yours is much more savory!

Roger, Can't say that it smelled like that...you have a very poetic way of describing "dumping". I am hopeful this time around. Sorry to hear about yours. Darlene
