second racking

Hi, I have a couple batches of wine going.. After the primary fermentation, I racked into a carboy.. and then after 1 month, I racked into another carboy as the recipe said (to leave the yeast on the bottom behind).

Now, I think the recipe said to rack again after another 3 months. Well, it's that time now. I look at the carboys, and there's hardly anything at the bottom.. I will go ahead and rack them anyway. But my question is, what is the purpose of this second racking?

Sorry for the newbie question, but this is my first attempt, and I forgot most of the info I read 4 months ago.

I think you'll find that even though you think you'll get everything after this racking, that even more will fall out in a couple of months as the wine ages. Follow the recipe. Darlene
