Where to buy strawberry concentrate?

I have a batch of strawberry wine that is stabilized, and somewhat ready to bottle. I am not satisfied with the flavour. It's a bit harsh. Perhaps either high alcohol, or, sat on the seeds too long in secondary fermentation. I would like to sweeten it up, not just with sugar or wine-conditioner. Rather, would love to find some flavourful strawberry juice concentrate. Is there such a thing? And if so, where can it be found? i don't see ANY at all in the grocery stores, and in other places where they have snow-cone flavoring juices, there's only cherry and something else, but no strawberry. So, if you have had experience with that, and know where it can be found, i'd appreciate a direction to go in. It needs to be a clear juice or flavouring concentrate, not a puree. My wine is clear! :-)

Thanks, Rick

Rick,

I did something similar to finalize and sweeten my 100% strawberry wine this year. I saved a couple of pounds of berries from the harvest and kept them in the freezer. When it came time to prepare to finish my wine, I thawed them in their freezer bag. The resulting juice was then warmed and sugar dissolved to a relatively high SG. I used a calculation to determine how much to add to my dry wine to get a particular final gravity (1.010), yet not dilute the alcohol past 11%. I then placed that sweet juice in a wine bottle, stoppered it, and left it in the fridge for a few days. It settled very nicely, and I gently poured off the clear stuff into my wine. I did filter the batch on a #2 (medium) pad, but for clarity this was not absolutely necessary.

Granted, you probably can't find decent strawberries now, but this technique is worth noting nonetheless.

What do you mean by stabilized? Has it been sorbated or sterile filtered? If so, you can sweeten the way ninevines suggests, as I've heard it works well. Another way is to purchase a prepared strawberry syrup. There are numerous Polish grocers in my area and they sell many different kinds of fruit syrup... that would work well for sweetening as well. But the important thing is to make sure your wine is biological stabilised first before sweetening it back up.
