While not exactly wine - but the easiest way to make Ginger beer.

But since making Rootbeer was mentioned:

I've tried this guy's method and it works like a charm. The end product is very much like a ginger lemonade. Of course the amounts of ginger and lemon can be "tweaked".

Nice link, that 'hard bottle' trick is a good way to determine carbonation in any sodas. It's how I make them.
