newbie on his first batch

Hey people, I'm a newbie in the middle of my first batch. I got my kit from

. Not spam or a plug, just mentioned it in case anyone heard something good or bad about it. I enjoyed the first part, but, the ingredient kit had everything measured out. Held your hand through the entire process. I was looking for a site or a book that gives you a good explanation (for a newbie) but gives you free reign to experiment and make your concoction. can someone point me in the right direction. Email me please, my news server sucks and I don't even get a tenth of the post
