Oops - Over Hopped - Can it be .... fixed ?

While racking the flavor is a little more bitter that I'd like. Used 3oz Galena during the boil, and so..... can I make it a little less bitter by adding somethign... um... basic ? What would that be?

You might try blending it with an under-hopped brew. Downside is you have to drink twice as much beer. Oh, wait... Forget that downside business.

Blending is a neat way to improve "taste challenged" brews. You could buy something at the grocery store or just brew up another of the same recipe but leave out the bittering hops. Up until recent centuries almost all beers were made without hops.

Time is on beer's side. Never judge a beer at racking or even bottling time. Conditioning makes a LOT of difference. I once threw out half a batch that I thought was infected because it tasted bad at bottling. I kept the other half just as an experiment to see just how bad it could get. After 6 weeks it turned out to be one of my all-time best brews.

It's my lucky day! Thanks Ed and oDDz who both responded. Just so happens that a neighbor just brought over a stout that I thought is a little hopless at racking time and I think I can convience him to blend half of each of our

5 gallon batches into one of my kegs, the other half of this highly hopped batch will go into another keg and in a few weeks I'll let you know which was the bigger mistake, er... seccess. Yeah, we might end up having to drink like a fish during the next few holidazes.
