Raspberry wheat beer...

Hi all,

I currently brew extract, and on the odd occasion do a mini mash.

Anyway, recently I tried a wheat beer with raspberry, and was wondering what was the method of getting this beer. Is it frozen raspberries in the wort, or an essence, or what?

Any help would be greatly appreciated.

The way I do it is to add fruit to the secondary fermenter. I freeze it first, then thaw it out which breaks down the cell walls. Put 1 lb. of fruit per gal. of beer into the secondary fermenter and rack the beer on top of it. DO NOT heat the fruit first! By the time you get to secondary the alcohol level and low pH of the beer makes it pretty resistant to infection. Don't leave it on the respberries more than a week...the seeds in the berries can give your beer an astringent character if you leabe it on the fruit too long.

There is a supply house in Erie, PA that offers a raspberry wheat beer kit. It is very good and uses Concentrated juice along with rice syrup to get a great flavor that improves with aging. The suppier is "Bierhaus Int." Hope this helps.
