Root Beer Recipes-Techniques

Does anyone have recipes or advice for making root beer? I am content to use one of the extracts that are available rather than gathering up the herbs and spices. Past attempts have yielded lots of exploded bottles. I am looking for a recipe that will produce a rootbeer with a nice creamy, long lasting head. Most of the "microbrew" rootbeers I have purchased -some pretty expensive- have a slightly better flavor than the usual brands, but none have the creamy texture I am looking for.

Try bottling at 1.002 - 1.005 Sp. Gr. (adjust added sugar down) and use propylene alginate (heading powder) for a smoother mouth feel. You will have to experiment with amounts. If you are having exploding bottles, then I suspect the excess CO2 (high bottling gravity) is counteracting the creaminess you desire. Hope this helps. Tom
