I don't know but, I dare say it's available over here but probably known by another name such as invert sugar or something like that. Maybe a quick google might uncover the mysteries of the American way of naming things - I mean, you might find the answer to the sugar but, I doubt if you can uncover the mysteries of the way they name things. Not necessary...if it's light (clear) candi sugar, table sugar can be subbed 1:1. For dark candi sugar, add 1 oz. of carafa malt to get the color, along with the table sugar.

Thanks Denny, you always seem to be full of information....
...full of something anyway :)
Heh heh...you've noticed! I brew a LOT, I read a lot, I've won a bunch of ribbons, I write for brewing mags, I'm a certified judge, I grade beer judge tests...I live a breath beer! Well, kinda...;)

I saw a show on cable the other week called 'endurance', it was a British rip off of those Japanese endurance shows. In one of the challenges they put a clear plastic bucket with a hole cut in the bottom over the contestants head, sealed the bottom around their neck and filled the bucket with beer, the last one to passout wins.......
I'm afraid that might put me off beer for the reast of my life...

I'm a dealer for LD Carlson, I could quote you a price if you want.......? Candi Sugar is listed in my catalog.
I've never used it before so I would only want a couple of kilograms to start with, how much would it cost me per KG if I were to pick it up from somewhere in Melbourne or the suburbs?
You can make your own candy sugar very easily, with minimal cash outlay.

Thanks for the thought though. Can anyone get to this website?
Thanks.
