Rules are mostly customs. I've compared tea, Chinese in particular, to particle physics. The more you look the more there is. My only rule always boil the water. You can take care of everything after that. I never think of tea as one is better than that. It is nothing more than what I am drinking at any point in time. I always kid my local tea shoppe I need a divining rod to pick a tea. At home I listen to the tea that screams the loudest.
