Upton's brewing instructions

Would appreciate informed criticism of Upton's instructions on water temp, amount of leaf, and brewing times for their offerings

Start with them and if you need, adjust to taste. For example with their keemuns I steep them

2 minutes. I also measure that tea with a kitchen measure and do about 1 tea spoon per 6oz. of water. With most of their Darjeelings I go by the instructions.

I completely agree.

I buy tea from Upton by the Kg or half Kg more or less constantly, usually with a small bag or two of whatever catches my eye, and I've kind of learned to start with the brewing instructions verbatim for the 1st cup or two, then start adjusting to taste. I mean, really. You know what you like, right? Brew per instructions and it tastes a little weak? Up the dose a tad. Try it again. Too weak still? Go from 2 min to 4 min. Me, I'm nuts like that. I buy Ceylons mostly, and the brewing times are totally out the window. Inverness Estate gets 2 tsp per cup and a good 10 minute infusion. Crazy, you say? Try it. You'll see God.

But really. Just play around a little bit, be scientific about it and keep notes (if you're anal), and you'll figure out the ideal dose and time for any given tea for your particular palate.

But the guys and gals at Upton aren't idiots. They really know their tea, and their recomendations are a great place to start.
