In keeping with my cellar clear out practice I found and opened a bottle of 1995 Olivier Leflaive Puligny Montrachet "Les Folatieres" that was the last of a case I bought on release. I grilled lobsters (on sale at Whole Foods for $5/lb) and served with fresh English pea risotto. The wine was medium gold in the glass with a sparkling clarity. Initial sulphur notes blew off quickly leaving a slight oxidative aroma of old apples. Intially almost cloyingly sweet with canned pineapple flavors and an underlying oxidative quality, 20 minutes in the glass allowed for a stunning turn around. Wonderfully complex with lemon lime, lemon curd, tropical fruits and vanilla custard on the palate all wrapped around a core of zippy saline minerality. "A-"
