Any pairing suggestions for Mexican?

Riesling in Australia unfortunately still has a damaged reputation because of the sweet cask wine which wasn't even made from Riesling grapes but was called Riesling. There is a lot of very good dry Riesling, particularly from the Clare and Eden Valleys and Great Southern (West Australia). It is a nice crisp citrussy wine and ages well too. They have been made that way for a long time and used to go for a song - a little more in fashion now.
