As an aside, how do you feel when the wine servers says, "we'll open the bottle, and let it breath... ?"

I usually step in, and ask for a pour for me (the host), and often for the guests, if I do not wish, or think it prudent, to decant.

I have called restaurants that I go to frequently and ask them to decant a bottle I order an hour before I get there. If I know their wine list well already it isn't too hard.
