Pairing Bordeaux for Vegetarians

Hi,

Looking for some advice on pairing a nice bordeaux (Chateau D'agassac

2000 - Haut Medoc) with something a "vegetarian" guest will eat (no beef, no pork - game, fowl, fish OK).

I'd suggest goose, if you can get it. It's a great foil to many red wines and is most certainly fowl. Since your wine is still in its infancy, it'll be somewhat tannic, so the goose fat will actually help "soften" the tannnins.

There's a goodly proportion of Merlot in this vineyard so duck would also be good - it's a shame wild duck is out of season, at least in the UK, otherwsie that woudl be great with it.

?????? Well, if a REAL vegetarian is looking to pair Bordeaux with something, use seitan. Lightly grill it and then let it slowly braise in a port/soy sauce. I will sometimes use a little soy margarine in the sauce as well to make a bit more savory.

Do you folks think it is to early to drink this. I thought that since it has a lot of merlot it time to start (I have 5 bottles).

My cheap 2000 bordeaux's seem to be about ready.
