Yesterday, Jean came home with a big bag of morels purchased at our favorite grocery store. Despite using some of them last night, sauteed with asparagus, we still had lots left over. Not one to waste a good fungus, tonight I sauteed up the remainder with shallots in butter, added some vegetable stock and half-and-half and reduced to make a sauce that I served over some freshly made fettucini. Since this dish fairly calls out for a good Pinot Noir, I went down to the cellar and came back with:
2002 Jean Grivot Vosne-Romanee nose: bright raspberry, pencil lead, later gaining some earthy notes palate: medium body, good acidity, raspberry fruitNot the most complex Burgundy, but also not shut down as I feared it might be, despite reports that it was drinking well. A good match with the dish, it could have used more earthy/mushroom notes than it had, but that's a quibble.
