acid reduction - raspberry

Sep 26, 2005 1 Replies

I searched the archive over the weekend but still am not sure - if I want to reduce acidity on raspberry "port" and given that the dominant acid in rasberry is citric, would potassium carbonate still work? If not, what other options are there, apart from further sweetening or dilution?

Thx,

Pp

Yeah, any carbonate or bicarbonate salt would work.
