I have some 'leftovers' from making Blackberry wine and was wanting to make Blackberry port, but since I didn't go from scratch would have to do it by fortifying the wine with brandy. Any idea how much I should use? Any suggestions would be greatly appreciated...

I fortified some blueberry-chokecherry wine recently with brandy. I used the Pearson square formula found on this newsgroup FAQ (

I wanted to make a 18% port out of a 12 % wine, so I used about 5 ounces of brandy and 21 ounces of wine per 26 ounces bottles.

Thanks! Will check it out after I go through the rest of the racking process and if I have any left over. Right now I do, but supposedly it may not have finished fermenting so can't bottle for another 2 months. Then we'll see. Who knows, I may not have any left over, but I suspect I will.....
