Bottling temperature

Hello

At this time of year my wine cellar is very cold. (5C/42F) Is this too cold to bottle. Should I move the DJ out and let it warm up before bottling.

Or can I just leave a little more ullage so that I don't overfill the bottles?

Hi Joe, I would move the wine into a warm room and let it warm up to about 70 degrees before bottling. Bottling always introduces a lot of oxygen into the wine and cold wine can hold almost twice as much oxygen as 70 degree wine. Good luck, Lum Del Mar, California, USA
